Chickpeas are one of our favourite legumes. They are super versatile and we always have a couple of cans at hand in our pantry. Here is a hummus recipe with a special twist. This one has no tahini in it, though you can always add a teaspoon or two. Once the garlic is roasted in the oven it transforms itself into a chewy, almost candylike texture. Give it a try and you will understand what I am talking about.

Ingredients
- 1 large can of chickpeas
- 1 large can of butter beans
- 100 ml extra virgin olive oil
- 1 head of garlic
- 2 tbsp lemon juice
- 1 to 2 tbsp water
- salt & pepper to taste

Instructions
- Cut the garlic head into two, horizontally. Place it on a piece of foil that’s large enough to wrap around. Lightly drizzle with the olive oil and season with salt and pepper. Close the foil up. Bake in a heated oven for approx. 40 minutes or until the garlic is soft and caramelized. Once cooked, let it cool down and then peel the garlic cloves.
- In a food processor, place the chickpeas, butter beans, roasted garlic, olive oil, lemon juice, salt and pepper. Pulse or blend until the desired texture is achieved. (We prefer a chunky hummus rather than a smooth one).
- Add a little bit of water and adjust seasoning, if necessary and blend again.
