The sun is finally shining here in Belgium. Two days ago we have had our first BBQ of the season. In our house, no barbequed meal is complete without this cheesy garlic bread.

- 1 fresh ciabatta or baguette
- 3 tbsp parsley finely chopped
- 60 gr butter melted
- 2 cloves garlic peeled and crushed
- 1/2 tsp salt
- freshly cracked pepper
- 100 gr mozzarella cheese grated

Instructions
- Pre-heat the oven to 200°C.
- In a bowl, mix together the melted butter, garlic, parsley, salt and pepper.
- Slice your ciabatta into two, lengthwise. Spread the butter mixture evenly on both sides. Close the bread and wrap it in foil. Bake it in the oven for 10 minutes.
- After 10 minutes, take the bread out of the oven. Unfold the foil and open the ciabatta. Sprinkle the mozzarella cheese on both sides and bake for an additional 5 minutes until the cheese has melted and the bread is crispy.
- Let the bread rest for a couple of minutes before slicing. Enjoy 🙂
