Irish Soda Bread is a very quick bread that does not require any yeast. All its leavening comes from the chemical reaction created from the baking soda and the buttermilk. This bread is dense, yet soft and has an incredible crust. We dare you not to devour the whole bread once it comes out of the oven. Warm soda bread with Irish salted butter is something out of this world.

- 500 gr bread flour plus extra for kneading
- 1 tsp salt
- 1 tsp bicarbonate of soda
- 350 to 400 ml buttermilk

Instructions
- In a large mixing bowl, mix together the flour, salt and bicarbonate of soda.
- Add the buttermilk and mit it together using a wooden spoon. (Depending on the absorbency of the flour, you might need to add a bit more milk or flour. The dough should not be too wet or too sticky.)
- Turn onto a lightly floured surface and knead it briefly until it all comes together.
- Shape the dough into a round ball, flatten slightly and using a knife, make a cross on the top of the dough.
- Let the dough rest for 10 minutes. In the meantime pre-heat the oven to 180C.
- Bake for about 30 to 40 minutes or until the loaf sounds hollow when tapped at the bottom.
- Let the loaf cool down before cutting. Serve with salted Irish butter.
