This recipe transports me directly to my grandma’s kitchen. We used to fight over who will get the crunchy potatoes found on top. Super simple, yet super delicious. Serve this as a side dish to roast chicken, roast beef or even baked salmon.

Ingredients
- 1 kg potatoes sliced
- 2 onions sliced
- 1 tbsp olive oil
- 1 tsp dried fennel seeds
- 2 garlic cloves minced
- Salt and pepper to taste
- 250 ml chicken stock

Instructions
- Pre-heat the oven to 180°C.
- In an oven proof dish, mix together all the ingredients.
- Cover with aluminum foil and bake covered for 45 minutes.
- Uncover and cook for a further 15 minutes or until the potatoes are crunchy on top.
